How to turn dried chili peppers into chili powder?

Dried chili peppers bought from the market must be cleaned thoroughly first. However, dried chili peppers used to make chili powder should never be washed with water. If you wash them with water, they’ll become damp and even absorb water inside. When you toss them into a hot pan of oil for stir-frying, the presence of water will prevent the oil from heating up properly and will also hinder the frying process from achieving the desired results. So remember: don’t wash them with water!

If you wash them with water, they’ll become damp and even absorb moisture inside. When you toss them into a hot pan of oil for stir-frying, the moisture inside will prevent the oil from heating up properly and will also hinder the frying process from achieving the desired results. So remember: never wash them with water!

The method for cleaning dried chili peppers is actually quite simple. Just take a large pot lid, place the dried chili peppers inside, and then use a clean cloth that’s been thoroughly washed to wipe them clean. While wiping, if you happen to spot any chili pepper stems inside, be sure to pluck them out promptly.

Once everything is thoroughly cleaned, you can start frying and stir-frying. If you’ve ever stir-fried peanuts before, stir-frying dried chilies will be a piece of cake—because stir-frying dried chilies is just like stir-frying peanuts. Simply pour oil into the pan, then add the dried chilies and stir-fry them until the oil is hot. At that point, the dried chilies are ready to be removed from the pan (be sure to use low heat when stir-frying dried chilies).

Set the stir-fried dried chilies aside to cool down a bit—hot chilies can’t be crushed easily. Once they’ve cooled, use a garlic press to grind them into chili powder. Don’t add too much at once; adding too much not only makes it harder to crush but also increases the likelihood of spilling. Gradually add small amounts and keep grinding until you’ve achieved the desired chili powder consistency. As you’re crushing them, you’ll already start to smell the fragrant aroma of the chilies.

If you’d like to make chili oil, simply put the crushed chili flakes into a seasoning jar. Then, heat some oil until it’s hot, and pour the hot oil into the chili jar. Next, quickly stir it a few times with chopsticks.

As soon as you pour in the hot oil, stir it evenly with chopsticks—otherwise, the hot oil might burn the chili flakes on top. If possible, I recommend stirring the chili flakes continuously while pouring in the hot oil. Once the chili oil has been stirred thoroughly and cooled down, it’s ready to eat.
