Guizhou’s unique geographical conditions and pleasant climate have given rise to distinctive chili peppers that boast exceptional qualities: a wide variety of types, distinct personalities, a harmonious blend of spiciness and aroma, and a mellow, refined flavor. Thus, when Guizhou residents say, “Only locally grown chilies are truly fragrant,” they’re by no means expressing blind confidence. As the only province in China with a chili pepper planting area exceeding 5 million mu, Guizhou boasts a superior variety coverage rate of over 85% for its chili peppers, and its processed-chili产值 ranks first nationwide. In 2021, Guizhou planted a total of 5.71 million mu of chili peppers across the province—accounting for one-tenth of the world’s total planting area—and its chili pepper production reached 7.87 million tons, surpassing one-third of the nation’s total output!

As the only province in China with a chili pepper planting area exceeding 5 million mu, Guizhou boasts a superior variety coverage rate of over 85% for chili peppers and ranks first nationwide in terms of processing output value. In 2021, Guizhou planted a total of 5.71 million mu of chili peppers across the province, accounting for one-tenth of the world’s total planting area. The province’s chili pepper production reached 78.7 million tons, surpassing one-third of the nation’s total output!

In 2023, Guizhou Province expects the output value of chili pepper cultivation to exceed 30 billion yuan, and the processing output value to surpass 16 billion yuan, boosting the income of an average of 1.4 million chili pepper farmers annually.

With a history of over 400 years of cultivation, coupled with long-term “survival of the fittest” and genetic variation, Guizhou has developed a rich variety of chili pepper types.

Guizhou currently preserves 3,100 accessions of chili germplasm resources. Among them, the most famous chili variety is undoubtedly the "Zunyi Chaotian Pepper," which originates from Zunyi in Guizhou and has a cultivation history of over 400 years. It mainly includes three major types: finger-shaped peppers, conical peppers, and round-seed peppers.

In addition to the well-known Chaotian pepper, Zunyi’s unique climate and altitude have given rise to five major chili varieties: Mantianxing, Bullet Head, Lantern Pepper, Yan Pepper, and Erjingtiao. These varieties are further categorized by spiciness level—extra hot, medium-hot, and mildly hot—and each variety has its own distinct preparation methods and uses.

In 2023, the “Chili Variety Replacement Project” in Zunyi City, Guizhou Province, had a planned task of 250,000 mu, but actually completed 255,100 mu, involving a total amount of 11.6 million yuan. The project featured a total of 12 varieties, including Zunla No. 9, Jiaoyang No. 6, Chaotian Pepper No. 6, Qianla No. 10, Zhuojiao Yuanzhu, and Zhuojiao No. 8. These varieties are not only suitable for cultivation in Guizhou but can also be grown in other regions such as Hunan, Hubei, and Yunnan.
