From bird's-eye chilies and horn chilies to lantern chilies, from long chilies to tiny chili peppers— the varieties are countless and endlessly diverse. Whether roasted over fire, deep-fried, ground into powder, or fermented— a single chili pepper can be prepared in over a hundred different ways. Pickled fish, roasted sweet potato skins, grilled eggs— none of these dishes can do without chili peppers. The only one in the whole country! With a chili pepper planting area exceeding 5 million mu, these more than 20 chili varieties are being cultivated in what’s known as the “World Capital of Chili Peppers”!

As the only province in China with a chili pepper planting area exceeding 5 million mu, Guizhou boasts a superior variety coverage rate of over 85% for its chili peppers, and its processed-chili产值 ranks first nationwide. In 2021, Guizhou planted a total of 5.71 million mu of chili peppers across the province—accounting for one-tenth of the world’s total planting area—and its chili pepper production reached 7.87 million tons, surpassing one-third of the nation’s total output!

Stepping into the production workshop of Guizhou Changge Food Co., Ltd., located in Guanshan Subdistrict, Longli County, we see workers working overtime to transport, screen, roast, blend, and grind chili ingredients, as well as to package and refrigerate finished products—rushing to produce various chili-based products that meet market demand and supply the holiday market. Guizhou Changge Food Co., Ltd. is a leading agricultural enterprise introduced to Longli County as part of poverty alleviation efforts through industry-driven development. The company primarily engages in the research, development, production, and sales of chili products. As the Spring Festival draws near, orders for the company’s various chili products have surged dramatically, ushering in a peak sales season. “Orders for the Spring Festival market are mainly for barbecue chili flakes, paste-style chili flakes, and seasoning mixes,” said Zhang Xiongli, assistant in the company’s sales department. “Order volumes have increased by about 40% compared to normal times. We anticipate preparing around 11.5 million orders before the New Year, with an estimated 6 million orders being shipped out in January. To relieve order pressure and ensure that every customer receives their goods on time, we’ve increased the number of staff on the production lines, guaranteeing uninterrupted production in each workshop and making sure all pre-New Year orders are fully shipped out.”
